Eggplant is a great addition to a healthy diet. It is high in antioxidants, vitamins and fiber, and is low in calories. Studies have shown that it may even protect your DNA. By doing so, this veggie may prevent some serious chronic diseases. Research has also been done suggesting that eggplant is good for your heart health, including your blood pressure. The CDC (Centers for Disease Control) writes that eggplant is also a good choice for people that have diabetes and kidney disease.
